Caroline
Born to Irish parents and raised in London, in 2009, Caroline decided to follow her dreams, and escape the city in pursuit of the ‘good life’. Moving to Kilkenny by sheer accident, falling in love with Thomastown and after some unexpected events, the life she once dreamt of became reality.
Having studied hospitality in Westminster College, London, in 1997, and worked in various establishments from Grosvenor House, Park Lane, London, to family owned restaurants in the west of Ireland. It has given Caroline the perfect mix of experience. ‘My aim is to provide five star service in a relaxed atmosphere, focusing on quality. Guests enjoying and indulging in the finer luxuries in life’. With a passion for interiors, food, cooking, gardening, the great outdoors, and an innate ability to look after people…Caroline began welcoming guests to also enjoy this beautiful property in 2014.
Arthur
Our most recent addition to the team, Arthur, our German Shorthaired Pointer. Currently in training for greeting guests for his first ever season…. He’s keen…and he CAN NOT wait to meet you all. Everyone’s his best friend.
Wilde
Wilde, our tabby kitty, head of pest control and Queen of napping since 2014. A typical cat, with staff, and although she is a dainty little lady, she certainly has a big attitude.
